Red cabbage salad recipe

Ingredients

Adjust Servings:
1 lb 2 oz (500 g) red Cabbage
1 small Red Onion
5 tablespoons Olive Oil
3 tablespoons White Wine Vinegar
1 tablespoon Balsamic vinegar
1 freshly squeezed Orange Juice
1 tablespoon Granulated Sugar
1 teaspoon Dijon Mustard
1 teaspoon Salt flakes
2 ripe Conference Pear
1 cup (100 g) Walnuts pieces
Salt
freshly ground Black Pepper

Finely slice the cabbage and red onion and place in a bowl. Mix together the remaining ingredients (apart from the pears and walnuts), then pour over the red cabbage and onion and toss. Set aside for a few hours to allow the flavours to mingle. This will also soften the cabbage and onion.

Just before serving, core and finely slice the pears and toast the walnuts. Mix with the cabbage and serve.
