Ingredients

Adjust Servings:
Macadamia Almond Lucuma Cookie
2 cups Almonds
¼ cup Macadamia Nuts
¼ cup Coconut flakes, macaroon-cut or fine-cut
¼ cup raw Honey (liquid or crystallized) or coconut nectar
4 tablespoons Lucuma Powder
1 teaspoon Vanilla Bean Powder
¼ teaspoon Camu Camu Powder (optional)
Few pinches of Sea Salt
Passion Fruit Coconut Cream
¾ cup Coconut Butter
¼ cup Coconut Oil
¼ cup Passion Fruit pulp or juice
2–3 tablespoons raw Honey (liquid or crystallized) or coconut nectar
Pinch of Sea Salt
Cacao Superfood Layer
2 cups Cacao Paste
3 tablespoons Coconut Oil
⅓ cup sun-dried Cane Juice crystals or coconut sugar
1 tablespoon Maca Powder
½ teaspoon Ashwagandha Extract powder (optional)
½ teaspoon Passionflower Extract powder (optional)
Pinch of Sea Salt

Steps

Place almonds in a high-power blender or a food processor, and mix until a flour forms.

Add remaining Macadamia Almond Lucuma Cookie ingredients to a food processor, and mix until a loose dough forms.

Line an 8 × 8-inch brownie pan with parchment paper, and press the dough into the pan with your hands, then top with another sheet of parchment paper, roll a straight-sided glass over the top to evenly compact the dough, and set aside.

Blend all ingredients for the Passion Fruit Coconut Cream in a high-power blender until mostly smooth—there may be tiny bits of passion fruit seeds if using the fruit pulp.

Melt the coconut butter and the coconut oil in a glass jar placed into hot water, or over a double boiler.

Pour Passion Fruit Coconut Cream over the cookie layer, and chill for at least 1–2 hours, until set.

For the Cacao Superfood Later

Melt the cacao paste and coconut oil in a glass bowl over a double boiler. Take the bowl off the heat just before the paste is completely melted, and continue to stir until fully melted.

Blend cane juice crystals in a high-power blender or a spice grinder until a powder forms.

Mix all ingredients for the Cacao Superfood Layer into the cacao paste, by hand, until smooth.

Pour the Cacao Superfood Layer over the Passion Fruit Coconut Cream layer, and chill for about 1 hour.

Remove from the pan, place on a cutting board, and cut into squares. Store chilled.
