2 Egg White (about ¼ cup) at room temperature
¼ teaspoon Cream of tartar
¾ cup Sugar
½ cup light Corn Syrup
¼ cup Water
1 teaspoon Vanilla Extract

Combine the egg whites and cream of tartar in the bowl of a standing mixer. Beat on high speed until the eggs form soft peaks. Set aside.

Combine the sugar, corn syrup, and water in a medium saucepan and bring to a boil over high heat but do not stir. Heat until the mixture registers 240°F (116°C) on a candy thermometer. Remove from the heat.

With the mixer on low, slowly pour the sugar syrup into the egg whites. Turn the speed to high and beat until the mixture resembles marshmallow creme, about 5 minutes. Add the vanilla extract and beat for 1 minute.

Pour the creme into a pint jar and refrigerate until needed.
