Ingredients

Adjust Servings:
1 large chopped Onion
3 chopped cloves Garlic
4 ounces Raisins
Chipotle Chile in adobo (finely chopped)
1 ounce toasted Sesame Seeds , toasted
28 ounces canned crushed Tomatoes
1½ ounces smooth Peanut Butter
1 teaspoon Cinnamon , ground
1 teaspoon ground Cumin
2/3 ounce Chili Powder
1⁄2 teaspoon Coriander , ground
1 teaspoon Sugar
1½ ounces of Cocoa Powder , unsweetened
1⁄8 teaspoon Nutmeg , ground
24 ounces skinless, boneless Chicken breasts

This chicken mole recipe is served as a dip for nacho chips or as filling for tacos. If you want to have chunkier pieces of chicken, then don’t shred the meat, but cut it up into smaller pieces in the sauce.

Mix onion, raisins, garlic, sesame seeds, chipotle chile and adobo sauce, peanut butter, canned tomatoes, sugar, chili powder, cinnamon, coriander, cumin, cocoa powder, nutmeg and chicken in a slow cooker.

Cook on low for 5-6 hours. Remove chicken from cooker, shred with two forks and place back in the sauce.
