6 cups cubed Watermelon , divided
½ cup diced Cucumber
6 tablespoons Lime Juice , divided
1 Scallion , thinly sliced, divided
¼ cup fat-free plain Yogurt
½ Jalapeno Pepper , seeded and chopped
¼ cup Orange Juice
1 teaspoon chopped fresh Ginger
½ teaspoon Salt

Dice 1 cup watermelon and combine in a bowl with cucumber, 2 tablespoons lime juice, and 1 tablespoon sliced scallion. Cover and refrigerate until ready to serve.

In a blender, place remaining watermelon, yogurt, remaining lime juice, remaining scallion, jalapeño, orange juice, ginger, and salt. Blend until smooth and creamy. Refrigerate about 2 hours, or until chilled.

Stir the reserved watermelon-cucumber mixture and divide evenly between five soup bowls.
