5 Egg
1 cup (240 ml) whole Milk
1 tsp Salt
¼ tsp Black Pepper
¼ cup (60 ml) White Onions , chopped - (Optional)
¼ cup (60 ml) grated Cheese
¼ cup chilled Shortcrust Pastry left at room temperature for 30 minutes before use
10-15 slices of unsmoked streaky Bacon

Quick and easy to prepare and cook, this classic version of an American bacon lattice pie is also known as breakfast pie too. Its’ a huge hit with everybody that has the pleasure to eat it and is a great alternative to a traditional breakfast fry up.

Steps

Preheat the oven to 350°F (180°C).

Crack whole eggs into a mixing bowl and whisk the eggs, salt, milk, and pepper thoroughly then add the onions (optional) and cheese and whisk again.

Roll out the pastry and cut into a large circle, large enough to place into an oven proof pie dish and crimp around the edges. Brush milk around the top edge of the pastry.

Pour the egg mixture into the pie crust and bake for 35-40 minutes or until set.

Lay the bacon on top of the pie and weave to make a lattice top.

Bake again for 20 minutes or until bacon is crispy. Leave to cool for 5 minutes and then serve immediately.
