Ingredients

2 lb 3 oz (1 kg) Blueberries
½ cup packed Brown Sugar (preferably muscovado sugar, more to taste)
3 tablespoons freshly squeezed Lemon Juice
1 Cinnamon stick
1¼ fl oz (40 ml) Apricot liquor (or to taste)
½ teaspoon Vanilla Extract , or 1 teaspoon vanilla sugar
sugar-free gelling agent, for a fruit:sugar ratio of 3:1

Mix the blueberries with sugar, lemon juice, a cinnamon stick, and apricot liquor, then lightly mash with a fork. Cover and let stand for at least 12 hours.

Pour the blueberry mixture into a pot and mix in the gelling agent. Bring to a boil over medium heat and boil for 2 minutes. Remove the cinnamon stick and pour into sterilized canning jars. Close immediately.
